Best Muffins Ever: Zucchini

This is hands down the best muffins I have EVER had or made. I originally made them because I saw them on Instagram and the person said they are “healthy”, I’m not sure how healthy they actually are though. I’m also super excited about this recipe because it’s the first TIME I didn’t just get the recipe off the internet, instead, I took the base recipe and have changed it to make, in my opinion, taste better. These muffins can be used as a great snack because they don’t have as much sugar as other more desert-like muffins tend to have.

Bake @ 375 for 15 minutes ( change accordingly)

Ingredients:

COCONUT OIL

MY FAVORITE HONEY

AN EGG

CHIA SEEDS

ZUCCHINI

1/3 cup of coconut oil

3/4 cup honey ( or maple syrup if you don’t have honey but it doesn’t taste as good

CINNAMON

VANILLA OR ALMOND EXTRACT

SIGGIS THREE CREAM YOGURT (the best for these muffins)

1 egg

1 cup of grated zucchini

1 tsp vanilla

1/2 cup of greek yogurt

1 1/2 cup whole wheat flours

1/2 tsp salt

1 tsp baking soda

1tsp cinnamon

1 banana

optional:

chia seeds (as many as you like)

dark chocolate chips

1 cup chopped nuts (I use walnuts)

Directions:

  1. Mix all together at the same time
  2. put in muffin tins (with holders or grease the tin)
  3. cook @ 375 for 15 minutes (adjust accordingly)

Tip: Use a toothpick to see if the muffins are ready. Dip the toothpick into the muffins and if it comes out dry they are done but if it comes out with stuff on it, they need more time.
